Herring Under a Fur Coat (Shuba Salad)

Masha's Russian Recipe - 13th February 2025

Ingredients:
  • 400g salted herring
  • 5 eggs
  • 3 carrots
  • 4 potatoes
  • 400 - 500g boiled beetroot
  • 400g mayonnaise
Method:
  1. Boil the potatoes and carrots for 20 minutes, then drain the water and let them cool.
  2. Boil the eggs for 10 minutes, then place them in cold water, drain, and let them cool.
  3. Finely chop the herring.
  4. Grate the potatoes, carrots, beetroot and eggs using a coarse grater.
  5. Assemble the salad in layers in a dish as follows:
    • Potatoes
    • Mayonnaise
    • Carrots
    • Mayonnaise
    • Herring
    • Mayonnaise
    • Eggs
  6. Mix the beetroot with mayonnaise separately and spread this as the final layer.
