Herring Under a Fur Coat (Shuba Salad)
Masha's Russian Recipe - 13th February 2025
Ingredients:
- 400g salted herring
- 5 eggs
- 3 carrots
- 4 potatoes
- 400 - 500g boiled beetroot
- 400g mayonnaise
Method:
- Boil the potatoes and carrots for 20 minutes, then drain the water and let them cool.
- Boil the eggs for 10 minutes, then place them in cold water, drain, and let them cool.
- Finely chop the herring.
- Grate the potatoes, carrots, beetroot and eggs using a coarse grater.
- Assemble the salad in layers in a dish as follows:
- Potatoes
- Mayonnaise
- Carrots
- Mayonnaise
- Herring
- Mayonnaise
- Eggs
- Mix the beetroot with mayonnaise separately and spread this as the final layer.
